What are you celebrating this month? This year, surprise and delight your guests by making a new dessert for the party. Food is an important part of all our special occasions, but that doesn’t mean health goes out the window! Ice cream is made over this week by pairing it with grilled peaches. By putting fruit on the grill, the heat will intensify the sweetness without any added sugar needed! Filling your bowl with this new sweet fruit treat means that ice cream portion will be smaller – and that’s a smart way to include an old favorite in a new way that makes better choices so delicious – and special enough to celebrate with.

Grilled Peaches with Vanilla Ice Cream

Prep Time: 5 minutes
Cook Time: 5 minutes
Amount: 4 servings

Ingredients:
2 Farm Stand® Yellow Peaches, halved, pits removed
3 tablespoons balsamic vinegar, divided
4 scoops vanilla ice cream
– mint leaves, for garnish

Directions:
1. Prepare grill to medium heat. Using 2 tablespoons balsamic vinegar, brush both sides of peaches. Place peaches on grill; grill, turning and brushing with vinegar occasionally, until caramelized and softened (about 5 minutes).
2. Remonve from grill and place each half, face up, on a dessert plate.
3. Top with ice cream and drizzle with remaining balsamic vinegar. Garnish with mint, if desired.
