Grilling is a great way to celebrate holidays this summer, and this chicken dish is sure to please. The basting sauce for this chicken is super easy so the kids can pull it together and really feel like they helped. By using skinless chicken, fat and calories are saved, too. You can use homemade or jarred salsa for this one – it’s up to you! Serve this with a crisp green salad, some corn on the cob that was also grilled, and a fresh fruit salad with berries, peaches, and nectarines. It will be a colorful plate filled with taste to celebrate.

Grilled Salsa Chicken

Prep Time: 5 minutes
Cook Time: 15-20 minutes

Amount: 4 servings

Ingredients:

1 pound Jewel® boneless, skinless chicken breasts
1/2 teaspoon Jewel® chili powder
1/2 cup salsa
1/3 cup Jewel® peach or apricot preserves
1 tablespoon fresh squeezed lemon juice

Directions:
1. Prepare grill to medium heat. Lightly season chicken breasts with chili powder; salt and pepper to taste.

2. Place chicken on grill; grill, turning once, 15-20 minutes or until internal temperature reaches 170°F on an instant read thermometer.

3. Meanwhile, in a small bowl, combine remaining ingredients. Generously brush both sides of chicken with salsa mixture in the last 5 minutes of grilling.
