Summer salads are so refreshing! They keep the heat out of the kitchen on hot days, make meal times fast to come together, and look festive with all the bright colors of favorite fruits and vegetables. All celebration menus include salads, and with all the “party foods”, salads can be a great tasting and nutritious balance – if the dressings and toppings are smart – to the heavier dishes we typically see on the table!

Here’s a summery, delicious idea for a vinaigrette that will keep calories and fat in check. At just 30 calories per serving, this is a tasty topper to celebrate with – and you can make it ahead so the day of the party has a little less work to do, too.

Fat Free Raspberry Vinaigrette

Amount: 1 ¼ cups servings

Ingredients:
1 cup wild harvest™ Organic Frozen Raspberries
1/2 cup wild harvest™ Organic Plain Yogurt
3 tablespoons red wine vinegar
2 tablespoons wild harvest™ Organic Honey
1 teaspoon wild harvest™ Organic Dijon Mustard
1/4 teaspoon finely ground wild harvest™ natural sea salt
1/4 teaspoon ground white pepper

Directions:
1. Combine all ingredients in blender or food processor. Blend until smooth.
2. Transfer to a tight sealing container and refrigerate until ready to use.
